Kin & Cascadia Cabernet Sauvignon

The grapes for our Cabernet Sauvignon are sourced from top vineyard sites in the Wahluke Slope AVA located in the famed Columbia Valley. The region is one of the driest, warmest climates in the state, perfect for Cabernet Sauvignon. The vineyards are composed of sandy and alluvial soils with vine shoots on original roots as phyloxera has never been in Washington State.

VINIFICATION

Fermentations begin with 100% native yeast to add depth, structure and complexity to the wine. The grapes are crushed whole berry and left on skins for 35 days. Syrah is fermented with 20% stems and on skins for 25 days. After fermentation, the wine spends three months in new and neutral oak barrels to round out the total flavor profile. 1/3 of the wine is aged in lowtoast French oak for six months.

VARIETAL: 90% Cabernet Sauvignon, 10% Syrah
VINEYARD: All our grapes are sustainably farmed. The Cabernet Sauvignon comes from Goose Ridge Ranch on the edge of Red Mountain. The Syrah is grown at Goose Ridge and the Wahluke slope with sandy / alluvial soil. All vines are on their own roots.
ALCOHOL: 13.5%

TASTING NOTES

Dark red in color, the bouquet of this beautiful wine has aromas of dark red fruits and even hints of chocolate. On the palate it is elegant and balanced with lingering flavors of mocha and black cherry.
