Exem Bordeaux

Exem red is estate produced in Lestiac-sur-Garonne about 20 miles southeast of Bordeaux on vineyards situated on south-facing slopes looking at the Garonne River. The soils are limestone, chalk and clay and the vines are between 10 to 35 years old. The vineyards are farmed sustainably with minimal use of herbicides and maintain the natural environment to allow the greatest biodiversity from plants and microorganisms and insects and birds.

VINIFICATION

The grapes are cold soaked for 48 hours followed by about a two week fermentation during which the juice is pumped over the skins 3 times per day. When complete, the juice is drained and the skins are gently pressed and then combined with the fermented juice. The result is a wine that is very gentle with soft tannins. The wine is then aged for about 12 months in French oak.
