The resulting wine is full-bodied and richly textured with complexity offlavor further enhanced by barrel fermentation. ‘Sur lie’ lets the fermented wine ‘sit’ overthe sediment created by fermentation. The barrels are stirred frequently to better absorb theflavors of the ‘lie’ (pronounced ‘lee’). The resulting wine has aromatic and flavor intensitycomplementing the rich character of this Santa Rita Hills Chardonnay. A moderate crop on low vigor vines gives us good concentration withripe flavors. Our new upper Mesa planting is producing better fruit each year as it matures.The fruit intensity allows full barrel fermentation as well as complete malolactic fermentation.
